Luwak coffee (or kopi luwak in Indonesian) is the rarest and most expensive gourmet coffee in the world that originates from Indonesia. Luwak/Civet coffee is made of coffee berries which have been eaten and passed through the digestive tract of the wild Asian Palm Civets. The civets eat the berries, yet, the beans inside pass through their system undigested.
All the beans are individually cleaned, hand-picked, and roasted at precise levels to achieve a premium grade. Having been washed thoroughly, the beans are dried out to bring the moisture content to as low as 12% then they are carefully roasted and grounded to preserve the unique flavor that has been developed through the whole process as the unique signature taste of uwak/Civet coffee.
It has rich unique aroma, heavy flavor with hints of caramel or chocolate. Other terms used to describe it are earthy, musty and exotic. The body is almost syrupy and very smooth with no hint of acidity.
